Final Year Project: The Study of Craft Beer Brewing and Industrial Production Process Design
Nowadays in Hong Kong, Craft Beer is becoming more and more popular. Unlike traditional beers from famous international brands, Craft Beer brewing is small in terms of production scale, and able to offer many different tastes which people could never imagine tasting it in Beer. This Final Year Project studied the major factors affecting the taste of beer, including the Mashing temperature and time, Yeast cells and Fermentation, and Hops Aroma. The industrial manufacturing process of craft beer, as well as the material balance, energy consumption, plant economics, process and product safety etc. were also covered. By the end of the project, a final recipe of Craft Beer was constructed based on the findings in the experiments and the consumer behaviour survey, in order to design a Craft Beer that favours most people in the market.
